The Yummiest Breakfast Salad

 

 


When you break your fast in the morning you should be nourishing your body with all the things it truly craves and needs to be productive and energized though out the day! 

And obviously I’m not a certified nutritionist myself but I’m addicted to researching and testing different ways of eating to get to my most optimal energy - allowing me to get the most out of each day and live a more joyful & creative life! 

A well balanced breakfast has all the things:

greens for vitamins &  energy 

potatoes for making you feel safe and full while regulating your blood sugar 

yogurt to feed the good bacteria in your gut 

olive oil for the healthy fats your brain needs 

and lean grass fed red meat for amino acids and protein that your body needs 

So if your ready to feel energized throughout your day here’s the recipe: 

2 cups of Arugula

2 tbsp of home made tsasiki or plain whole fat Greek yogurt (full tsasiki recipe below)****

4 tbsp extra virgin olive oil imported from Greece 

1tsp red wine vinegar 

1 tsp balsamic vinegar glaze 

salt, pepper, oregano to taste 

mix greens well - like really well until they are all coated and soggy from the dressing 

Then add in: 

Avocado 

crumbled feta 

As much meat as you’re feeling today - Thinly sliced Grass fed beef - pictured is the pre-made pack from Costco 

or add chicken, Turkey, boiled eggs, salmon or tuna depending what you have in your fridge today. 

Baked cubed potatoes - baked in the oven coated with olive oil, salt, pepper & paprika. Add water to the pan for extra softness. 
Usually at the begging of the week I’ll make a big batch of potatoes and eat them cold throughout the week!

**** home made tsasiki recipe: 

2 cups whole Greek yogurt 

2 tbsp olive oil 

1tbsp red wine vinegar 

4 cloves fresh garlic finely grated 

1/2 cucumber peeled and shredded 

salt, pepper to taste 

Fresh dill
